A Wisconsin original cheese! The first Colby was made in 1885 in Colby, Wisconsin and named after the village. Longhorn is a style of American Colby cheese defined by its round, long, orange cylindrical shape. Similar in flavor to Cheddar, Colby is softer and has a more open texture and high-moisture content. Colby is made with the same process as Cheddar except the curds are kept separate with cold water, which prevents them from knitting together. This gives Colby a more elastic texture than Cheddar.
