What truly defines Bierkse is its traditional production method. The cheese is crafted using a specialized smear to surface-ripen the wheel, a process that enhances its signature tangy flavor and creamy profile as it ages. Much like its cousin, Limburger, Bierkse ripens for seven or more months in highly humid conditions, developing a boldly pungent aroma and a distinctly robust character.
